Mission: Veggie-edibles
For the next 21 days, I will eat only vegetables and fruits for dinner and document the dishes on this blog. I’m doing this for the following reasons:
1. Health - I don’t want to get sick.
2. Vanity - I don’t want to get fat.
3. Challenge - I don’t want to fail now that I’ve officially announced that I’m doing this.
4. Nerdy hobby - I like learning stuff about things.
5. Frugality - I don’t want to be a gastadora anymore.
Mind you, this will not be easy for me. I used to be one of those maldita children whose mouth literally had to be pried open so I can eat (or more appropriately, swallow) a single cube of kalabasa.
But then, four years ago, after turning 25, my metabolism suddenly slowed down and I ballooned to almost 140 pounds--- more than 20 pounds heavier than my ideal weight! My supportive boyfriend told me that in one photo taken at a beach, I looked like Garfield. That was when I decided to make drastic lifestyle changes including quitting smoking and red meat*, exercising regularly and eating more fruits and vegetables.
Today, I’m redefining my diet once again and hoping to stick to it for at least 21 days, the ‘magic time’ required to form a new habit, so that by the time I hit the big 3-0 I will have achieved what I have always dreamed of: a flat stomach. There, I said it. Now you know how shallow I am.
I welcome all comments and suggestions on how to prepare veggies since I am a total ignoramus when it comes to these things. Hopefully, I will get something more from this challenge other than my superficial goals and perhaps maybe, emerge a better person. (crossed fingers)

*Quitting smoking or not eating red meat does not necessarily equate to living well. In fact, according to a psychologist (whose teachings I follow obsessively), “ritual smoking” can actually be good for one’s wellness. I swear, that's what he said.
